Destemmed and left on the skins for 24 hours. Gently pressed and fermented cold and slow throughout harvest. Racked and bottled December 14, 2022, to finish fermentation in the bottle. Disgorged August 30, 2023.
Pale raspberry color. Aromas of strawberry, raspberry, juicy peach, and a touch of savory wild herbs. Delicate effervescence, fresh and lively on the palate with high crisp acidity, and a dry yet fruity persistent finish.
